bcachefs: Fix BTREE_INSERT_NOMARK_OVERWRITES

bch2_mark_update() was correct, but bch2_trans_mark_update() wasn't
respecting BTREE_INSERT_NOMARK_OVERWRITES - key marking/triggers really
need to be cleaned up.
